Killer Colcannon (Cabbage and Potatoes)

Early spring and the cabbage is heading up.  It is time to begin eating fresh and nutritious NEW vegetables and this is a good one. 

2 lbs potatoes, washed, cubed

1/2 head of cabbage, sliced into 1/2 ribbons

3/4 cup cream or half and half

salt & pepper

1 stick of butter

optional, sliced scallion greens 

optional Crispy bacon


Boil the cabbage and potatoes until tender 

Add in sliced butter, salt and pepper and then smash up the potatoes with a fork or potato masher.  Stir in the cream, mix well and serve with butter pats on top and the scallions and/or bacon.

Great, soul fulfilling food on a cold, damp night.
